Delicious Pairing: Miso Sesame Cookies & Fort Berens Grüner Veltliner!

“I wanted to create a fun and unexpected recipe pairing to celebrate the flavour profile of Fort Berens’ dynamic Small Lot Grüner Veltliner 2025, and these Miso Sesame Cookies were the result. The wow factor in these delightful savoury cookies is thanks to the secret ingredient, miso! Miso is a fermented soybean paste, a staple in Japanese cuisine, that adds a magical umami quality.

This wine’s racy acidity and citrus notes elegantly lift the richness of these buttery treats, while the earthy miso creates a perfect savoury match. Simple to make, they’re ideal for your next Fort Berens vino hour or as part of a charcuterie board. Enjoy!” 

Miso Sesame Cookies 

Serve with Fort Berens Grüner Veltliner • Makes 12-14 cookies

INGREDIENTS

• 2/3 cup all-purpose flour

• 1/8 cup berry sugar

• 1/2 tsp baking powder

• 60 grams cold butter, diced

• 1 (heaping) tbsp white miso paste

• 1 egg yolk

• 2 tbsp sesame seeds

INSTRUCTIONS

1. Blitz flour, sugar, and baking powder in a small food processor until well combined.

2. Pulse in cold butter, miso, and egg yolk and continue to pulse until combined.

3. Transfer the crumbly dough onto a sheet of plastic wrap and shape into a log about 15cm long.

4. Flatten the ends and twist plastic wrap to secure. Refrigerate for at least an hour.

5. Preheat oven to 350°F. Remove log from plastic wrap and roll log in sesame seeds to coat well. 

6. Cut into 12-14 discs and place on a parchment-lined cookie sheet.

7. Bake for about 13-15 minutes, or until the edges are turning golden brown.

8. Remove miso butter cookies from oven and set aside for about 10 minutes and then transfer to a wire rack to cool completely before serving. Enjoy! 

Note: These cookies also freeze well.
